Ingredients:

  • 1/4 cup sugar

Directions:

  1. In a large saucepan or double boiler, bring water to just about a boil, do not let it boil! Reduce heat to medium or low to maintain the simmer.
  2. On the top of the double boiler or in a heatproof bowl, combine egg yolks and sugar and whisk to combine.
  3. Set on top of barely boiling water and whisk constantly. After about 5 minutes, add Marsala wine.
  4. Whisk constantly until mixture becomes thicker and increases in volume, about another 8 minutes.KEEP WHISKING! (you could use a hand mixer to do this if that is easier).
  5. Serve over fresh Strawberries in Martini glasses or any other large mouthed glass.(You could use any type of berries but strawberries are traditonal, romantic and the best tasting). Serve immediately.
