Ingredients:

  • 1 cup cornmeal
  • 1 cup ap flour
  • 2 tsp sugar or maple syrup
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/4 cup buttermilk
  • 1/4 cup yogurt
  • 1/4 cup corn oil

Directions:

  1. Oven 425*, grease a springform pan.
  2. Mix flour, sugar, soda, salt, zest.
  3. Combine eggs, buttermilk & yogurt.
  4. Add dry ingredients & pour oil over the batter. Stir in - do not over mix
  5. Bake for 20-25 minutes
