  • 1 Cover the wheat berries with water and soak overnight.
  • 2 The next day place the wheat berries with 8 cups of water in a large saucepan.
  • 3 Bring to a boil, reduce heat and simmer for about 1 to 1 1/2 hours or until tender, uncovered.
  • 4 Drain and refrigerate until completely cooled.
  • 5 Combine the wheat berries, apricots, cherries, red onion, scallion, and parsley in a bowl.
  • 6 Whisk together the vinegar (use the amount to your taste - sometimes I even use champagne vinegar here), dijon mustard, olive oil and salt and pepper.
  • 7 Stir dressing into the wheat berry salad.
  • 8 Serve.
