Turkey, Pasta, and Three Cheese Casserole

Ingredients:

Directions:

  1. Cook turkey, onion, and garlic in large nonstick skillet over medium heat until lightly browned.
  2. Stir in tomato sauce, sugar, salt, and pepper.
  3. Remove from heat and set aside.
  4. Combine ricotta, cream cheese, sour cream, and scallions in a blender and process til blended (don't overmix).
  5. Spray an 11x7-inch baking dish with nonstick cooking spray (a casserole dish works fine too).
  6. Spread half the cooked pasta in the bottom and top with half the turkey mixture.
  7. Cover with the cheese mixture, then the remaining pasta.
  8. Cover with the remaining turkey mixture and sprinkle with Parmesan.
  9. Bake til hot and bubbly, about 30 minutes, at 350 degrees.
