Sweet Simmered Shiitake

Ingredients:

  • 3 tbsp soy sauce
  • 2 tbsp sugar
  • 2 tbsp sake
  • 2 tbsp mirin

Directions:

  1. Soak the shiitake in cold water until soft. Remove the stems.
  2. Put the shiitake in a pot with water to cover.
  3. Bring to a boil and then reduce heat and add all the other ingredients.
  4. Continue simmering until the liquid is almost completely absorbed.
