Ingredients:

  • 1/2 lb mushroom
  • 2 tbsp olive oil
  • 2 cups cheese
  • 10 3/4 oz mushroom soup
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1 cup cracker
  • 1 tbsp butter

Directions:

  1. Thinly slice yellow squash and zucchin. Wash and slice mushrooms. Slice onion. In sauce pan add olive oil and saute all above. DRAIN. Combine vegetables , 2 cups grated cheese, 1 can mushroom soup, 1/2 cup sour cream and 1/2 teaspoon salt. Grease a casserole and add all. Crush crackers like ritz and mix in 1 tablespoon butter. Put on top of vegetables. Bake 25-30 minutes in 350 degree oven.
