Spaghetti Squash Casserole

Ingredients:

Directions:

  1. Preheat the oven to 350 degrees. Cut the squash in half length-wise and scoop out the seeds.
  2. Put the squash in a 9x13 casserole dish face down so the peel is facing up. Bake for 1 hour and then cool.
  3. Defrost the spinach and squeeze out any water.
  4. Use a fork the scrape out the squash flesh in strings so that it looks like spaghetti. Put all of the spaghetti in a mixing bowl and add the cottage cheese, parmesan cheese, spinach and eggs and mix together.
  5. Pour the mixture into the same 9x13 pan. You don't even need to wash it!
  6. Spread the marinara on top and bake uncovered for 45 minutes at 350 degrees.
  7. Enjoy!
