olive oil, chopped onion, minced garlic cloves, chipotle chiles in adobo, diced, ground cumin, dried oregano, adobo sauce (optional), fat-free refried beans, salsa or 2 tbsp rotel tomatoes & chilies, more to taste

velveeta cheese, frozen chopped spinach, thawed and squeezed dry, cream cheese (i use fat free, can tsp tell the difference!), rotel tomatoes & chilies (i use hot ), jalapeno pepper, seeded, half-and-half (fat free is good too)
