butter, red bell pepper, chopped, white onion, diced, zucchini, sliced, yellow squash, sliced, chicken broth , or as needed, condensed cream of mushroom soup, reduced-fat sour cream, cornbread stuffing mix

cooked rice (i used brown, but i am sure white will work just as good), olive oil, zucchini, sliced thin, yellow squash, sliced thin, chopped white onion (or whatever you have), green bell pepper, chopped, mushrooms, sliced (more if you wish), garlic cloves, minced, garlic salt, paprika, cayenne pepper, dried oregano, petite diced tomatoes (or reg.diced), mexicorn (drained ), black beans, rinsed and drained, cheese , i used italian blend but monterey jack would also be good, sliced cooked chicken (optional)
