chicken stock, spinach, cheese-filled tortellini, frozen (approx.size of bags), fresh flat-leaf parsley , approx. a handful of, lemon , zest of, parmigiano-reggiano cheese, to taste (approx. couple of handfuls ), crusty bread

sweet onions (depends on their size - enough to fill a large pan), butter, salt, white wine or flat champagne (less sweet the better), beef stock, chicken stock, apple cider, bouquet garni (if you want to make your own tied in some cheesecloth: thyme, parsley, bay, etc), french bread, salt & pepper to taste, grated gruyere , fontina, or similar cheese, splash of cognac (optional - but highly recommended )
