Roasted Potatoes, Onion, and Garlic

Ingredients:

  • 3 potato (2-1/3 x
  • 2 tbsp olive oil
  • 1 medium (2-1/2 dia) onions
  • 4 cloves, raw garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cut potatoes into bite-sized pieces. Slice or dice onion; mince garlic. Add all to a ziplock bag with olive oil. Mix well, then season to taste. Bake at 425 degrees for 30 to 40 minutes, turning once midway through.
