Ingredients:

Directions:

  1. Mix together in a small bowl, the 1 tsp sugar & the 1/8 tsp cinnamon & set aside
  2. Pre-heat oven to 425 degrees
  3. Biscuit Topping:-
  4. In a small bowl, combine baking mix, 1 Tbspn sugar, milk, butter & the zest.
  5. Mix until just combined - set aside
  6. Filling:-
  7. In a separate, heatproof bowl, combine pie filling, peaches, lemon juice & cinnamon
  8. Heat in microwave on high for about 4 mins or until hot - stirring after 2 mins
  9. Pour into a 8x8 inch casserole dish
  10. Drop 6 scoops of the topping over the hot filling
  11. Sprinkle with the reserved cinnamon/sugar mixture
  12. Bake for 18 - 20 mins, until the topping is golden
