Ingredients:

Directions:

  1. Preheat oven to 350*.
  2. Combine butter, sugar and brown sugar in bowl.beat at medium speed till creamy - 1-2 minutes - add egg, 3 tbls orange juice and 1 tbls orange zest.
  3. Continue beating till mixed.1-2 minutes -
  4. Add flour, baking soda, salt.reduce speed to low.beat 1-2 minutes.stir in cocont, pecans and carrots -
  5. By hand drop dough by rounded tspfulls 2 apart on ungreased cookie sheet.
  6. Bake 10-12 minutes or golden brown -
  7. Remove to wire rack and cool completely.
  8. To prepare FROSTING:.
  9. Combine powdered sugar, 1 tbls orange zest and enough orange juice to desired spreading consistency.
  10. Frost cooled cookies.top each cookie with a pecan half and a little grated orange peel.if desired.
