Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Spray a non-stick muffin pan with cooking spray, set aside.
  3. In a bowl, combine the dry ingredients.
  4. In separate bowl, combine egg, egg white, yogurt, milk, oil and mincemeat; mix well.
  5. Add egg mixture to flour mixture and stir just until moistened.
  6. Fill muffin cups 3/4 full.
  7. Place in oven and bake 20 to 25 minutes or until golden brown.
  8. Remove from oven and brush while warm with melted marmalade.
