Ingredients:

  • 1 (16 oz) container fresh strawberries,quartered
  • 1 (10 oz.)package. frozen mixed berries
  • 1/3 cup honey
  • 1 tbsp cornstarch
  • 1/4 tsp cinnamon
  • 3/4 cup flour
  • 1/2 cup sugar
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup milk
  • 1/2 tsp vanilla

Directions:

  1. Preheat oven to 375 degrees.
  2. Fruit:
  3. Place fruit into bottom of 9 square cake pan. Whisk together honey,cornstarch and cinnamon. Pour over fruit mixture and toss. Set aside
  4. Cake:
  5. In large bowl,whisk together flour,sugar,lemon zest,baking powder and salt. In small bowl,whisk together egg,milk and vanilla. Add to the dry ingredients and mix until just combined. Pour in melted butter and stir till mixture is smooth. Spoon batter on top of fruit.
  6. Bake about 45 mins or till topping is golden and fruit bubbling.
