Mint Meltaway Sugar Cookies

Ingredients:

  • 1 -2 bag hershey's milk chocolate chips
  • 2 eggs
  • 2/3 cup oil
  • 2 1/2 tsp vanilla
  • 3/4 cup sugar
  • 2 cups flour
  • 1/2 tsp salt

Directions:

  1. Mix sugar, vanilla, oil, eggs in a bowl.
  2. Add flour, baking powder, and salt to mixture.
  3. Drop dough on cookie sheet by tablespoon.
  4. Slightly flatten dough with fingers.
  5. Sprinkle a little bit of sugar on the top of the cookie dough.
  6. Bake at 400 degrees F for about 6-9 minutes.
  7. Let done cookies cool completely and put to side.
  8. Microwave 1 1/4 cups milk chocolate chips and 3/4 cup mint chips for about 1 minute in a bowl.
  9. Stir well.
  10. If needed, microwave for an additional 10 seconds and stir again (repeat as needed).
  11. Spread a good amount on top of cool cookies until the top is completely covered.
  12. Repeat step 8 as many times as needed to cover all cookies.
  13. Let topping cool completely.
  14. If you have a hard time waiting like me, you may want to put the cookies on a cookie tray and stick them in the freezer until the topping cools completely (maybe about 20 minutes).
