  • 1 lb crabmeat
  • 1 large egg yolk
  • 1/4 cup breadcrumbs
  • 1 tblsp parsley
  • 2 tblsp unsalted butter, melted
  • 2 tblsp mayonnaise
  • 1 tsp hot sauce
  • 1 tblsp dijon mustard
  • 1/2 tsp celery seed

  • 1 Dry the crab meat well with papertowels.
  • 2 Then gently fold in the remaining ingredients.
  • 3 Divide this mixture into 4 equal portions and shape into tight rounded cakes.
  • 4 Sprinkle some bread crumbs on your work surface Press the top of each cake into the crumbs and then place, crumb side down on a plate and refrigerate for 1 hour or up to 8 hours.
  • 5 Grease a small rimmed baking sheet with 1 tblsp of softened butter.
  • 6 Place the cakes onto the prepared caking sheet, crumb side down.
  • 7 Adjust oven rack to the upper-middle position and broil the cakes until they are golden brown, approx 12 to 15 minutes
