Ingredients:

Directions:

  1. Prepare the sweet and sour dressing by combining all the ingredients and shaking well, and refrigerate.
  2. Cook almonds and both amounts of sugar over low heat in a skillet stirring constantly, until all sugar is melted and almonds are coated well, and just golden in colour.
  3. Cool on parchment, then break apart.
  4. Rinse lettuces and place into salad bowl.
  5. Add the chopped onions, and celery.
  6. Pour on the dressing, then add the drained mandarin orange segments.
  7. Toss all lightly and gently.
  8. Place salad onto plates and sprinkle each serving with the sugared almonds, and a slice or two of red onion rings.
