Kielbasa, Pasta and Cheddar Bake

Ingredients:

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Coat a 10-cup baking dish with non-stick cooking spray.
  3. In large pot of lightly salted boiling water, cook rigatoni until al dente, firm but tender, following package instructions. Drain.
  4. In large heavy-bottom saucepan, heat olive oil over medium-high heat.
  5. Add onion and cook until softened, 5 to 7 minutes.
  6. Stir in flour, cook 1 minute.
  7. Gradually whisk in milk.
  8. Bring to boil, stirring continuously; boil until thickened, about 1 minute.
  9. Remove from heat.
  10. Set aside 1 cup of cheese for topping casserole.
  11. Whisk remaining 2 cups cheese, hot-pepper sauce, and salt into mixture.
  12. In pasta pot, combine rigatoni, cheese sauce, kielbasa and apples into baking dish.
  13. Cover.
  14. Bake covered for 30 minutes.
  15. Uncover and stir.
  16. Sprinkle with 1 cup remaining cheese and scallions.
  17. Bake until cheese is melted, about 10 minutes.
  18. Let stand 10 minutes.
  19. Serve.
