Ingredients:

  1. Preheat oven to 340 degrees.
  2. Wisk together yolks and zest.
  3. Beat in milk, beat for a minute or two.
  4. Beat in lime juice 1/2 at a time.
  5. Let mixture sit to thicken up.
  6. Pour into prepared crust.
  7. Bake for 15 minutes.
  8. Let cool to room temp, then refrigerate for several hours before serving.
  9. If you are using a deep pie shell, double the recipe and bake for an additional 5 minutes.
