Italian Zucchini Pie

Ingredients:

  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 2 eggs
  • 1 (8 oz) package mozzarella cheese (about 2 cups) or 1 (8 oz) package muenster cheese (about 2 cups) or 1 (8 oz) package monterey jack cheese, grated ( about 2 cups)

Directions:

  1. Saute zucchini and onion in a little oil until tender.
  2. Beat eggs with a fork and add herbs, cayenne, salt and grated cheese. Mix together.
  3. Add cooked zucchini mixture to egg and cheese. Mix well.
  4. Pour into a greased baking dish.
  5. Bake at 350°F for 20-25 minutes.
  6. Let sit for 5 minutes before serving.
