Grilled Salmon With Broccolini

Ingredients:

Directions:

  1. In a small bowl combine 1 tablespoon lemon juice, 1 teaspoon italian seasoning, 1 teaspoon of the olive oil, lemon zest and 1/3 of the garlic.
  2. Brush mixture on the salmon filets.
  3. Coat grill rack with nonstick cooking spray.
  4. Preheat grill to high(400-450 degrees Fahrenheit) .
  5. Place salmon on grill skin side down.
  6. Grill for 8-10 minutes without turning or until fish flakes easily with fork.
  7. Remove fish from grill; cover and keep warm.
  8. In a large nonstick skillet bring 2 cups water to boiling over medium heat.
  9. Add broccolini;reduce heat and simmer for 2 minutes.
  10. Transfer broccolini to large bowl of cold water.
  11. Discard cooking water from skillet.
  12. Return skillet to medium high heat.
  13. Add olive oil.
  14. Add shallot and remaining italian seasoning.
  15. Cook for 2 minutes or until shallot is softened.
  16. Add tomatoes and remaining garlic.
  17. Cook for 2 minutes or until tomato skins begin to shrivel.
  18. Return broccolini to skillet.
  19. Add vinegar and remaining 1/2 tablespoon lemon juice.
  20. Cook and stir 1-2 minutes until heated through.
  21. Place on serving platter and top with salmon.
