Ingredients:

  • 4 eggs
  • 1 cup oil
  • 2 cups pumpkin
  • 2 cups flour
  • 2 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Heat oven to 350 degrees. Beat together 4 eggs and 2 cups sugar. Add 1 cup oil and 2 cups pumpkin and beat again. To this mixture, add 2 cups flour, 2 tsp baking soda, 2 tsp cinnamon and 1/2 tsp salt. Mix until all ingredients are completely blended.
  2. Portion mixture into baking cups 3/4 full to allow room for rising.
  3. Bake for 18-20 minutes.
  4. Makes 20-30 cupcakes.
