Ingredients:

Directions:

  1. Preheat oven to 400
  2. Line a baking sheet with parchment paper, set aside
  3. On a lightly floured surface, unfold pastry
  4. Roll into a 14x11 rectangle
  5. Trim down to a 12x10 rectangle
  6. Place on the prepped baking sheet, brush edges of the pastry with the egg white
  7. Cut 1/2 strips from the pastry trimmings, place these strips on the edges of pastry rectangle, pressing to form raised rims
  8. Brush again with the egg white
  9. Prick the center of the pastry with a fork to prevent puffing, set aside
  10. For topping, in a small bowl stir together flour, sugars, ginger and lemon peel
  11. Cut in butter until pea sized pieces form
  12. Sprinkle half of the topping over the pastry
  13. Arrange pear slices on the pastry, overlapping slightly
  14. Sprinkle with the remaining topping
  15. Bake 15-18 minutes or until pastry is golden and pear is tender
  16. Serve warm, if desired garnish with whipped cream
