Fennel and Rosemary Roasted Pork

Ingredients:

Directions:

  1. Preheat oven to 200°C.
  2. Place fennel, onion, garlic and rosemary in baking dish.
  3. Add oil and toss to coat.
  4. Cook 15 minutes.
  5. Brush pork with oil and season.
  6. Heat non stick fry pan on medium.
  7. Add pork and sear each side for 3 minutes till browned.
  8. Place in baking dish, cook further 15 to 20 minutes till fennel tender and pork cooked through.
  9. Slice pork, toss with the vegetables and serve on a bed of baby spinach.
