Ingredients:

Directions:

  1. Sauté almonds with bacon in skillet.
  2. When almonds are lightly roasted and bacon crisp remove from skillet with slotted spoon.
  3. Add zucchini, eggplant and onion then cover and cook over medium 15 minutes.
  4. Shake pan often to prevent sticking.
  5. Mix in flour then add tomatoes breaking them up with a spoon into chunks.
  6. Stir in garlic, salt, pepper and basil.
  7. Layer vegetables, almonds, bacon and cheese in baking dish.
  8. Place bacons and almonds on top then bake uncovered for 20 minutes at 400.
