1. Put onion and green pepper in large skillet and cook for a little while over medium high heat, stirring regularly (you don’t want to brown them; basically, you’re just steaming them for a little bit in the moisture that’s contained within the vegetables).
2. Add ground beef. Chop the meat into very small pieces so that it blends totally with the vegetables.
3. Add salt and pepper and cook until meat is brown.
4. Add mushroom soup, diced tomatoes, and tomato juice. Mix everything together.
5. Toss in mushrooms.
6. Simmer for approximately 45 minutes.
7. Serve the goulash over cooked macaroni
8. Enjoy with a pan of cornbread!
