Dear Abby's Famous Pecan Pie

Ingredients:

  • 1 single crust, 9 inch, unbaked
  • 220 g (1 cup packed) brown sugar
  • 3 eggs
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup pecans

Directions:

  1. Beat the eggs. Add the remaining ingredients, in the order given; work in the nuts. Pour into a 9 inch unbaked pie shell. Bake at 350° for 40-45 minutes.
  2. Note: The original recipe stated that the pie should be baked 45-50 minutes in a preheated 350 degree gas oven. If an electric oven is used, it may be necessary to add 15-20 minutes to the baking time. (Begin testing the pie with a toothpick after 45 minutes.)
  3. A reviewer's tip: Tap the top and if it springs back it is done - and will set up as it cools.
