Cucumber Salad With Honey, For Two

Ingredients:

Directions:

  1. Place cucumber in a colander set over a bowl.
  2. Sprinkle with salt.
  3. Let stand 30 minutes to drain off excess liquid.
  4. Rinse with cool water and pat dry with paper towels.
  5. In a salad bowl, combine drained cucumber and chopped green onions.
  6. In a small bowl, combine all Dressing ingredients.
  7. Pour over cucumber and onions, toss to coat.
  8. Garnish with green-onion flowers.
  9. To make green-onion flowers, trim top and bottom from a green onion leaving a 3-inch stalk.
  10. With a sharp knife, shred the white bulb end to within 1-inch of the green top.
  11. Place in iced water at least 1 hour, or overnight.
  12. The shredded part will open up into a flower.
