Cranberry Loaf With A Hiccup

Ingredients:

  • 2-1/3 cups / (580 ml) all-purpose flour
  • 2 tsp / (10 ml) baking powder
  • 1/2 tsp / (2 ml) salt
  • 1/3 cup / (80 ml) sweet butter, softened
  • 2/3 cup / (160 ml) sugar
  • 2 large eggs
  • 1/2 cup / (125 ml) le snoreau(cranberry flavoured beer)
  • (if you can'tsp find cranberry flavoured beer then a fruity beer will do)
  • 2/3 cup / (160 ml) marmalade or apricot preserves/jam
  • 1 cup / (250 ml) fresh cranberries
  • note: i have used frozen cranberries and they work well.

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Sift together the flour, baking powder, and salt.
  3. In a separate bowl using an electric mixer, cream the butter and sugar.
  4. Beat in the eggs one at a time.
  5. Mix in the beer.
  6. Blend the marmalade / apricot jam with a spatula or wooden spoon.
  7. Add the flour mixture and blend together.
  8. Add the cranberries last.
  9. Butter and flour a 9 inch loaf pan.
  10. Pour the mixture in and bake for approximately 1 hour, or until a cake tester comes out clean.
  11. Cool the loaf for about 10 minutes, then turn onto a rack to cool completely.
