Coconut Pecan Cake With Broiled Frosting

Ingredients:

Directions:

  1. Heat oven to 350°F
  2. Combine all cake ingredients except coconut and pecans in large bowl.
  3. Beat at low speed, scraping bowl often, until all ingredients are moistened.
  4. Beat at high speed, scraping bowl often, until smooth.
  5. Stir in coconut and pecans by hand.
  6. Pour into greased and floured 13x9-inch baking pan.
  7. Bake for 45 to 50 minutes or until cake springs back when touched lightly in center and edges begin to pull away from sides of pan.
  8. Heat broiler.
  9. Combine all frosting ingredients in small bowl until well mixed.
  10. Spread over warm cake.
  11. Broil 2 to 4 inches from heat until bubbly (1 to 3 minutes).
  12. Serve warm or cool.
  13. Note: Substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. Let stand 10 minutes.
