1. Heat the oil and fry off the onion until light brown, then add the ginger and fry further 2 minutes, now add the garlic and spices and fry for a further minute, do not let spices burn, now add the made up coconut milk and cook sauce out (reduce it) for 10 - 15 minutes. Pour over grilled chicken and enjoy.
2. If your using quorn chicken pieces, add at the same time as the coconut milk. add 1 ounce toasted almonds if wished before serving.
