  1. Cook broccoli in a 5-6 quart saucepan of lightly salted boiling water until.
  2. Crisp tender, about 3-4 minutes. Drain; rinse under cold water and drain.
  3. Again.
  4. Preheat oven to 425°F Beat egg whites until soft peaks form. Gently fold in.
  5. Mayonnaise, cheese, parsley flakes and grated lemon peel.
  6. Arrange broccoli in 1 1/2 to 2 quart ovenproof glass baking dish. Drizzle with melted butter. Spread egg white mixture over top. Bake until top is puffy and golden brown, about 5 minutes. Serve immediately.
