Better Than Great Chocolate Buttermilk Cake

Ingredients:

  • 1/2 cup butter
  • 2 eggs
  • 1/2 cup cocoa
  • 1 tbsp vanilla
  • 1/8 tsp salt
  • 1 tbsp baking soda
  • 1 cup buttermilk
  • 2 cups sifted flour
  • 1/2 cup boiling water
  • frosting
  • 1 stick butter
  • 2 tbsp cocoa
  • 2 tsp vanilla
  • 1-1/2 tbsp milk

Directions:

  1. Beat butter and sugar until creamy then add eggs, vanilla, salt and cocoa.
  2. Mix baking soda in buttermilk until it starts to fizz then pour buttermilk into batter.
  3. Stop mixer and add flour then mix until smooth about 3 minutes.
  4. Add boiling water and mix then pour batter into rectangular cake pan.
  5. Bake at 375 for 30 minutes then cool completely before frosting.
  6. Combine all frosting ingredients in bowl of electric mixer and beat 2 minutes.
  7. Cool cake completely then spread frosting over tops and sides of cake.
