Directions:

  1. Heat oil in a medium nonstick skillet over medium-high heat. Add onion, bananas, shallot, and garlic; sauté 2 minutes. Add curry powder, and sauté 30 seconds. Add chicken broth, and simmer 5 minutes, stirring occasionally.
  2. Place onion mixture, vinegar, honey, and salt in a blender, and process until smooth.
