Artichoke Pilaf

Ingredients:

  • 1-1/2 cups basmati rice
  • 4 large cloves garlic
  • 1/4 tsp olive oil
  • 1/8 tsp dried thyme
  • 1/8 tsp basil
  • 3 cups water

Directions:

  1. Rinse rice several times until rinse water runs clear.
  2. Sauté garlic and herbs in olive oil until fragrant about two minutes.
  3. Add rice and sauté another three minutes.
  4. Add artichoke hearts and sauté another minute.
  5. Add water and bring to a boil.
  6. Cover then reduce heat and cook about fifteen minutes.
  7. Turn off burner and let sit five more minutes.
  8. Fluff with fork.
