Apricot & Banana Muffins

Ingredients:

  • 1/8 tsp salt
  • heaping 1/2 cup superfine sugar
  • 1/3 cup plumped dried apricots, finely chopped
  • about 2/3 cups of milk
  • 2 large eggs

Directions:

  1. 1. Preheat the oven to 400 F/200C.
  2. 2. Grease a 12 cup muffin pan or use paper liners.
  3. 3. Sift together the flour, baking powder and salt.
  4. 4. Then stir in the sugar and dried apricots.
  5. 5. Mash the bananas and put in a bowl. Make up the puree to 1 cup with milk.
  6. 6. Lightly beat the eggs in a bowl and then add the banana and milk mixture and the oil.
  7. 7. Add the wet ingredients to the dry ingredients and store gently until just combined.
  8. 8. Spoon the batter into the prepared muffin pan and bake in the preheated oven for about 20 minutes, until well risen, golden brown and firm to the touch.
  9. 9. Let the muffins cool for about 5 minutes and then transfer them to a wire rack to cool completely.
