  1. 1 To prepare pastry, in a medium bowl, combine flour, sugar, and cinnamon. Mix well. Using a pastry blender or 2 knives, cut cream cheese into flour mixture until coarse crumbs form. Combine milk and egg yolk.
  2. 2 Add milk mixture to dry ingredients tossing with fork until a dough forms. Divide dough in half. Shape each half into a ball, wrap in plastic wrap; chill 1 hour.
  3. 3 Preheat oven to 350º. To prepare filling, combine pineapple, applesauce, and cinnamon.
  4. 4 On a floured surface, roll 1 dough half into an 11 inch square. Fit dough into an 8 inch square baking dish; spread filling over top. Roll remaining dough into a 9 inch square. Cut into 3/4 inch wide strips. Arrange strips over filling. Trim excess dough.
  5. 5 Bake until golden, about 45 minutes. Place on a wire rack and cool completely. Dust with confectioners' sugar. Now after cooled cut into 9 bars and place on a serving platter.
