Ingredients:

  • 1/2 small green cabbage
  • 1/2 small red cabbage
  • 3 medium carrots
  • 1/2 cup mayonnaise
  • 1 tbsp sugar
  • 1/2 tsp salt

Directions:

  1. Slice cabbages into thin shreds, place in large both. (Don't worry if it looks to full, this will shrink in volume once dressing is added.).
  2. Grate carrots and add to bowl with cabbage.
  3. *Feel free to use a food processor for the above directions to save some time, make sure to use the slicing & grating disks.
  4. In a small bowl whisk together mayonnaise, sugar, vinegar, salt & pepper until smooth.
  5. Pour over cabbage & carrot mixture. Stir slowly until coated. Let stand 5 minutes or until it looses a bit of volume.
  6. Note: This dressing also works great for a bag of coleslaw mix, it is dryer than fresh cabbage so it soaks up more dressing.
  7. If not serving right away, refrigerate for up to 2 days for fresh or 1 day for bagged.
