black-eyed peas, cleaned, washed, drained and soaked overnight in plenty of water, green chili, washed, ends trimmed , slit and finely chopped, garlic cloves, peeled, washed and finely chopped, fresh ginger, peeled, washed, sliced and finely chopped, roma tomatoes, washed, peeled and chopped, salt, turmeric powder, red chili powder, purple onions, water, divided (this does not include water for soaking the peas), olive oil

olive oil, chopped green onions, garlic clove, minced, black-eyed peas, rinsed and drained, microwaveable cooked brown rice (such as uncle ben s ready rice)

john, canola oil, trinity vegetable mix (fresh diced onions, bell peppers, celery), black-eyed peas (undrained ), instant rice (i use either mahatma or uncle bens long grain and cook it myself, i just dont like ), canned italian-style diced tomatoes (undrained ), cooked bacon pieces, i have used the ro-tel tomatoes and green chilis, it worked well. it was a little spicer. this goes great with fried catfish and some turnip greens.
