boneless lamb loin, extra virgin olive oil , plus, extra virgin olive oil, fresh basil leaves, finely chopped, red bell peppers , roasted and peeled, red wine vinegar, soft mild goat cheese, spinach , 6 cups

ground lamb, onion, chopped (1 cup), garlic cloves, peeled and finely minced, tomato puree, honey, fresh rosemary leaves or 2 tsp fresh greek oregano, minced, salt , to taste, pepper , to taste, flat sandwich buns (approximately 3 oz each) or 6 ciabatta (approximately 3 oz each) or 6 sourdough bread, split (approximately 3 oz each), goat cheese or 5 oz chevre cheese or 5 oz feta, baby spinach leaves, washed and dried, roasted red peppers (my addition)
