raw mexican chorizo(if in links , remove from casing)...i made my own, using this recipe: mexican chorizo de puebla, melted butter, red onion, or 1/2 large, diced, heavy cream or half and half, milk, eggs, canned(or fresh, sauteed with the meat , onion and garlic) green chilis or jalapenos, diced, crusty bread , day old is preferred, torn or cut into 1/2 inch pieces, cojack or monterey jack cheese, shredded, cotija or other mexican crumbly cheese, grated, kosher or sea salt and fresh ground pepper, fresh cilantro for garnish

chorizo sausage, casing removed, whole milk, eggs, ground cumin, salt, ground black pepper, sourdough bread, crusts trimmed, shredded hot pepper monterey jack cheese (about 7 oz), chopped mild green chilies, drained, chopped fresh cilantro
