  • 1 Preheat oven to 350 degrees.
  • 2 In a skillet, cook sausage until lightly browned.
  • 3 Drain and set aside.
  • 4 Coat 8 extra large muffin cups approximately 2 1/2 in wide with non-stick spray.
  • 5 Put a wonton wrapper in each cup.
  • 6 Coat lightly with non-stick spray and brush with butter.
  • 7 Repeat with second wonton wrapper, placing on anangle in each muffin cup to form a blossom shape.
  • 8 Coat with non-stick spray or brush with butter.
  • 9 Sprinkle 1 t grated cheese into each wonton cup.
  • 10 Break one egg into each cup.
  • 11 Top with 1/8 of cooked drained sausage.
  • 12 Sprinkle 1 t green onion over each egg.
  • 13 Season with salt and pepper to taste.
  • 14 Bake 15-20 minutes until wrappers are golden and eggs are set.
  • 15 Cover with foil if shells brown too quickly.
  • 16 Serve with salsa.
