1. Set oven to 400 degrees. 2. Wash and dry de-boned trout pieces. Pat dry. Salt & pepper Place in a piece of parchment paper, set on a foil lined tray 3. Mix first 5 ingredients. 4. Chop tomatoes, mushrooms, celery and cilantro or parsley. Place on top of fish. 5.Salt & Pepper to taste. 6. Pour #3 over vegetables and fish. 7. Top with lemon slices. 8. Seal parchment and place in oven for 20 minutes.9. Serve with rice or risotto. May add sliced onion to the vegetables. This could also be placed on the grill.
