Potato & Leek Soup with Ginger

Ingredients:

  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 leek
  • 125 ml light cream
  • 1 pinch of salt
  • 1/2 cup of fresh coriander
  • 2 tbsp fresh ginger

Directions:

  1. Lightly cook onion garlic and leek in a pot with olive oil until pale.
  2. Chop the potato into slices and add to pan
  3. Add 3 cups of chicken stock and 1 to 2 cups of water. enough to cover the vegetables.
  4. Add ginger to mix and bring to the boil.
  5. When boiling allow soup to simmer until potato is cooked through.
  6. Remove any excess water to an esitmated desired soup consistency and blend soup using a blender.
  7. Add the cream and allow to simmer for a few minutes.
  8. Add the coriander to taste and serve with some toast.
