Ingredients:

  • 2 cups plain flour
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 tsp lemon juice
  • 4 1/2 cups shredded carrots
  • 4 eggs
  • 1 cup oil

Directions:

  1. Mix dry ingredients.
  2. Add rest and bake for one hour at 325 degrees F.
