Ingredients:

Directions:

  1. 1. Cook onions, garlic, chili powders, curry powder, and cayenne pepper in olive oil for about 5 minutes or until onions are soft.
  2. 2. Add carrots and 1 can of vegetable broth. Bring to boil and reduce heat. Let simmer for about 10 minutes to soften carrots.
  3. 3. Add can of diced tomatoes, corn, black beans, red beans, and remaining vegetable broth. Bring to boil and reduce heat. Cover and let simmer for 30 minutes.
