Spiced Apple Muffins

Ingredients:

  • 2 cups flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 egg , slightly beten
  • 1 cup milk
  • 1/3 cup oil ( melted butter or shortening can also be used)
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

Directions:

  1. Sift flour, baking powder, salt and sugar. (For extra spice, add 1 teaspoons cinnamon and nutmeg to the flour). Stir in chopped apple.
  2. Combine egg, milk and oil. Add liquid to dry ingredients. Mix lightly but do not beat.
  3. Spoon into greased muffin tins, 3/4 fgull.
  4. Sprinkle on topping.
  5. Bake in 400F oven for 15 minutes.
