Ingredients:

Directions:

  1. In medium pan, bring 2 1/2 cups water to boil. dd 1/2 teas salt, and the rice. Turn heat to low, cover and simmer 15 minutes. Remove from heat, let sit 5 minutes, uncover and fluff with fork.
  2. Whisk lemon juice, olive oil, garlic, oregano, pepper, red pepper flakes, and remaining 1 teas salt in large bowl.
  3. Add rice and toss to combine.
  4. Add spinach, toss, let sit about 20 minutes.
  5. Add remaining ingredients and toss. Serve cold or at room temperature.
