Colonial Gingerbread

Ingredients:

  • 2 cups flour
  • 1 cup molasses
  • 3/4 cup buttermilk
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 egg

Directions:

  1. Preheat the over to 325 degrees Fahrenheit.
  2. Butter and flour a 9x9x2 inch pan.
  3. Measure all ingredients into a large bowl. With mixer at low speed, beat until blended, constantly scraping the bowl with a rubber spatula.
  4. Increase the speed to medium and continue beating for 3 minutes, occasionally scraping bowl.
  5. Pour into pan. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  6. Cool in pan on a wire rack.
  7. Note: 1 T. vinegar plus milk may be substituted for the buttermilk.
